Your bitch will probably be in heat in a month or so depending on her physical condition. Most breeders do not breed every heat cycle as pregnancy is tough on the female. The average breeding program is to breed the bitch once a year.

First of all sex is one of the strongest drives in all animals... Allowing a dog to breed when they are ready will mean you will have puppies every heat cycle. What breed is your bitch? How old is she? Has she had all of the genetic screening tests associated with her breed? Is she registered with a legitimate kennel club and not one of the pet registries? What is your reasons for wanting to breed dogs?

IMO I would let her go thru two heats before breeding her again.

it is best to skip a heat cycle between breedings...when she is on her next heat she may act competely fine and ready for mating but breeding so soon will age her body more because her body needs more time to heal from the last pregnancy. This is one of the worst issues with puppy-mills breeding too much is considered abusive...it is important to make sure the female is truely ready to breed again and not just being horny. Veterinarians dont know everything by the way sometimes they give inaccurate information...usually to make more money.
